MOCKTAIL 

A mocktail is short for 'mock cocktail'. It does not have any alcoholic liquor or ingredient. A mocktail is any mixed drink that does not have alchohol. The name mocktail is derived the word ' mock ' meaning to ' imitate ' or mimic referring to mocktails imitating a cocktail as it seems very similar to a cocktail but does not have alcohol or any other spirits. 

In mocktail, the ingredients that always use are fresh fruits and vegetables, carbonated water, and cordials. Fruits and vegetables also can be blend. For the garnishing, you can put the fruits or pudina leaves depends on your creativity!!

In our class, each student must create their own mocktail recipes. So we want to share our mocktail recipes to the readers. have a read yaa!

MOCKTAIL by AFIQAH ROHAIDAH

Ingredients

A Grape Marigold Juice


Some Grape ( cut into two parts )


Some lychees ( not including the syrup !! )


Some ices 

Steps
1. Firstly, put the lychees and put the grapes which have been cut two parts.
2. Then, Pour the Marigold grape juice into the glass and add some ices 
3. Okay done!! Ready to drink!

Steps


  1. Firstly, put the lychess with syrups too
  2. Then, add the mineral water and the squeezed lemon.
  3.  Add some ices and get ready to drink!!
  4. For the garnishing, use lemon.

Fish fillet ^^ ~ ^^

Hye readers! So, in our next practical we have been learned about how to fillet a fish. As usual, we will show  you steps on how to fillet a fish.

What you need are...

Fish ( pomfret ) or anything fish do you prefer.
Table fork
Table spoon
Fish Knife
Dinner plate



Firstly, marinate your fish and steam it about 15 - 20 minutes. 


Secondly,  remove the fish skin and cut the fish at the top of the body and cut the bottom of the body using fish knife




Then, remove the fish bones 




Cut the center of the fish and become two parts




Repeat the same steps at the back of the fish
Final product

How To Open Can Beverage

beverage can is a metal container designed to hold a fixed portion of liquid such as a carbonated soft drinks, alcoholic beverages, fruit juice, teas, tisanes, energy drink,etc. Beverage cans are made of aluminium (75% of worldwide production) or tin-plated steel (25% worldwide production). Worldwide production for all beverage cans is approximately 475 billion cans per year worldwide, 52 billion per year in Europe.

There are many ways to drink beverage can. Some people enjoy drinking right out of the can or bottle, others like to use a straw and some people drink out of a glass. It doesn't matter which way you drink beverage can, but drink in a way that makes you feel relaxed and comfortable.

STEP 1 :
You should have a can beverage, a glass, a straw and a tray.
STEP 2 :
Fill the glass with ice.
STEP 3 :
Open the can by lifting the metal tab or cap until you hear the fizzing sound.
STEP 4 :
Pour the water into the glass
STEP 5 :
Let the can beside the guest
STEP 6 :
Put the straw in the glass

How to open and serve sparkling bottle

Carbonated water also known as sparkling water, fizzy water and seltzer, is plain water into which carbon dioxide gas has been dissolved, and is the major and defining component of most soft drinks. The process of dissolving carbon dioxide gas is called carbonation. It results in the formation of carbonic acid (which has the chemical formula H2CO3). Today, carbonated water is made by passing pressurized carbon dioxide through water. The pressure increases the solubility and allows more carbon dioxide to dissolve than would be possible under standard atmosphere pressure. When the bottle is opened, the pressure is released, allowing the gas to come out of the solution, thus forming the characteristic bubbles.

Step on how to open the sparkling :

Utensils

A paring knife
A goblet
A plate

Ingredients

Some ices
Squeezed lemon
Sugar
Sparkling





  • Get a goblet and put some squeezed lemon on a top a goblet.
  • Then, put some sugar on the top of goblet.
  • Hold the sparkling bottle and open the bottle using paring knife
  • Twist the retaining wire on the wire cage six half-turns counter-clockwise
  • Either leaving the wine cage on the cork or removing it, put your thumb on top of the cork and grasp it with the rest of your hand. While holding the cork steady, firmly twist the bottle with your right hand. It is most comfortable to do this with the bottle held at a 45 degree angle and balanced on your side or hip.
  • The goal of this operation is to barely make a sound when the cork comes out. ( pop sound )
  • Pour the sparkling water in a goblet

banana cutting ~ ( ' o ' ) ~

  • Place banana horizontally on a cutting board
  • Hold it steady by a fork
  • Then, use a paring knife to cut off both ends
  • Next, cut the middle of the banana horizontally
  • Flip both the banana
  • Slightly peeled banana skin by using a fork and rolling the skin
  • Cut the banana in same size
  • Place the banana on a serving plate
  • Okay done!!

  • Place Kiwi on cutting board
  • Hold kiwi steady with fork
  • Using paring knife to cut off both ends
  • Place kiwi in stand position
  • Put a fork on kiwi based to ensure kiwi will not move
  • Peel away skin from upper to bottom part downward
  • Until it's skin clear and just see kiwi flesh
  • Place kiwi vertically from you
  • Slice the kiwi
  • Transfer the slices kiwi to serving plate
  • okay done!!

After salad... why don't we try to learn on how to cutting fruits?? =P

On our previous class, our lectures, Puan Ruhaiza and Puan Asmahani have make demo on how to cut the fruits nicely. This skills is based on food and beverages service using service gear. So it's quite different from usual cutting fruit at home as we cut this fruits without touching with our hands. 

The basic fruits that usually we used to make cutting in food and beverages services are :
  • Green Apples 
  • Kiwi fruits
  • Banana
  • Oranges
Firstly, for green apples it's quite complexity and challenging for those people who does not impatience. Instead, we also take times to make this fruit cutting completely done as this is our first time too. So, we think this fruit cutting is very helpful as they taught us on improving our skills in f&b service. Okay readers, if you want to make this fruit cutting make sure you choose the quality fruits. What you need when you want to do this skills are :
  1. A paring knife
  2. Table spoon and Table fork
  3. Cutting board
  4. Two plates
Apple Cutting ~~

  • Place an apple on cutting board.
  • Hold an apple steady with a fork. 
  • Use paring knife to cut off the center part.
  • Take out sections were cut until it become a round hole in center.
  • Cut off the bottom part until black hole clear.
  • Peel away all skin from bottom part to round hole downward until the skin clear and just see the apple flesh.
  • Cut into two section.
  • Use paring knife to cut off the center part.
  • Remove the seed part and make sure the seed part is clear
  • Slice each part into 1 section
  • Finally, carefully transfer an apple slice to serving plate
  • okay done!!

How to make salad tossings =)

So, now we want to teach you on how to make the easiest salad tossings!! Firstly, what you need to prepare for making this salad tossing are....

 Ingredients

  •  Iceberg lettuce 
  •  Carrot ( fine julienne)
  •  Tomato
  •  Lemon squeezed
Utensils
  • Two wooden spoons
  • A bowl
  • Table spoon and Table fork

PROCEDURES
1. Firstly, put two slice of iceberg lettuce in a bowl using table spoon and table fork.
2. Secondly, add fine julienne carrot and add the tomato.
3. Then, put the squeezed lemon on them for seasoning.
4. Serve salad tossings on a plate.
5. Done and enjoy it!!

Learn on how to set up the Table Dhote

  • Place the Dinner Plate in the middle of the side of the table
  • Place the BB plate on the left side of the Dinner Plate
  • Prepare all the Cuttleries 
  • Starting from the right side of the Dinner Plate, we must put Table Knife, Appertizer Spoon and Soup Spoon
  • On the left side of the Dinner plate, we put the Table Fork and Appertizer Fork
  • On the BB plate, we must put the Appertizer Knife and above the Dinner Plate we put the Dessert Spoon and Fork
  • Put the Goblet above the Dinner Plate as shown..

A'la Carte Table Setting

Wiping plate, goblet and cutlery

Hey guys,here we come with the steps how to wipe plate, goblet and cutlery.



  • Pour the water from the water pitcher.
  • Flatten the water to all area of the plate.
  • Pour the water back to the water pitcher.
  • Wipes the plate by using a cloth.
  • Wipes all area of the plate.
  • Placed the plate on the table without hold the plate by hand or finger print.




  • Placed the goblet flip over to water pitcher to allow the water vapour come inside the goblet.
  • Cover all the goblet surface with clothes.
  • Wipes the inner side of the goblet.
  • Placed the goblet on the table carefully.



  • Enter all the cutleries into the water pitcher for 2 minutes.
  • Remove the cutleries from the water pitcher.
  • Wipe all the cutleries.
  • Placed the cutleries on the plates.
  • Arrange the cutleries nicely.
